Steel cut oats with apple sauce

This porridge needs a little love and attention the night before. But you will definitely benefit the next morning.



Ingredients (4 portions)

  • 400 g steel cut oats
  • 2 apples, grated
  • 1 tsp cinnamon, ground
  • 1/2 tsp ginger, dried
  • 1 tsp cardamom
  • 200 g pumpkin seeds
  • 2 tsp salt
  • 125 ml water

Topping

  • Apple sauce
  • Milk
  • Apple sauce
  • 3 medium apples
  • 50 g sugar
  • 2 tbsp water
  • 1/2 cinnamon stick
  • 1 tbsp squeezed lemon

Prepare as follows:

  1. Apple sauce: Rinse the apples, core and cut into smaller pieces.
  2. Place all the ingredients in a pot and bring to a boil for roughly 10 minutes. Refrigerate overnight.
  3. Porridge: Bring all the ingredients to a boil while stirring for roughly 5-10 minutes
  4. Top with apple sauce and milk

It’s important to keep in mind that the cooking time is not exact. The porridge must cook until the grains release the starches and take on a creamy consistency. Does it feel too thick? Just add more liquid.
